Unlike Fruit Ninja, where you have to be quick and cut as many pieces of fruit as you can, there's a certain amount of fruit in each level of this game, and those are the only ones you have to cut. So it's not about endless accumulation but about meeting your objectives.
Each level is different from the last, but they all have one thing in common: cut fruit to unlock the cocktail and juice recipes that make up each level of the game. Little by little, you'll have to cut more fruit, and its placement will continue to vary. For example: in the first levels, you'll find the fruit placed in columns, so you can throw your ninja star to cut them all in a single move. However, as you advance, you'll find the fruit placed in a square or in a row, requiring you to be quick as you try to cut as much fruit as you can in one fell swoop. If you throw the star without cutting any fruit, you lose.
